Cranberry Christmas Cake

Ingredients

3 eggs
2 cups sugar
3/4 cup butter, softened
1 teaspoon vanilla
2 cups flour
12 ounces fresh cranberries

Preparation

Preheat oven to 350 degrees F and butter a 13 x 9 inch baking dish.
In the bowl of your stand mixer, beat the eggs with the sugar until the mixture thickens, about 7 minutes.
Add the butter and vanilla, mix for 2 more minutes.
Stir in flour, then add cranberries.
Pour batter into prepared pan.
Bake for 40-50 minutes.
