INGREDIENTS
1 1/2 cups of flour
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 cups of milk
1 egg
3 tablespoons vegetable oil (approx.) + 1 tablespoon
PREPARATION
1. In a bowl add flour and sugar and baking powder and salt
In another large bowl, whisk together milk, egg and 3 tbsp (45 mL) of the oil.
Add milk mixture to dry ingredients and mix all good
2. Lightly brush a non-stick pan with a little oil and heat over medium heat. For each mini-pancake, pour about 1 tbsp (15 mL) of the batter into the pan (cook 4 mini-pancakes at a time). Cook for 1 minute or until the bottom of the pancake is golden and craters form on the surface. Turn pancake over and continue cooking for 1 minute or until bottom is golden brown. Repeat with remaining batter and oil.
