Carrot cake

Carrot cake
250 g grated carrots
125 g sugar
60 g crushed walnut kernels
200 g flour
1 sachet baking powder
1⁄2 tsp cinnamon
2 eggs
125 g melted butter

STEP 1
Preheat the oven to thermostat 5 (150°C).
STEP 2
Whisk the eggs with the sugar. When the mixture doubles in volume and becomes frothy, gradually add the flour and melted butter while continuing to whisk, then the cinnamon, yeast and finally the grated carrots and walnuts without stopping to whisk.
STEP 3
Mix well, pour into a cake tin and bake for 1 hour.

STEP 4
Let cool before unmoulding.
