STEP 1
Preheat the oven to 180°C (gas mark 6) and roll out the pastry in a pie tin.
STEP 2
Cook the sweet potatoes in boiling water for 30 minutes.
STEP 3
Peel and mash the potatoes.
STEP 4
Mix with egg, melted butter, sugar, cinnamon, nutmeg and vanilla extract.
STEP 5
Pour the mixture over the dough and bake for 45 to 50 minutes.
