Avocado and citrus salad with shrimp

List of ingredients

For the shrimps
400 g. raw shrimp, peeled
1 l of water
5 dl. white wine
1 lemon
1 stick of celery
1 branch of flat parsley
1 bay leaf
1 sprig of thyme
1 tsp. fennel seeds
1 tsp. chili flakes
1 tsp. white peppercorns
Coarse salt

For the salad
2 avocados
1 orange
1 blood orange
1 grapefruit
1 lemon
1 lime
1 red onion
olive oil
chili flakes
salt and pepper


Preparation steps

Start by cooking the shrimps, bring the water, wine and all the other ingredients to a simmer in a large pot. Add the shrimp, bring to a boil and cook for 2 minutes.


Remove the pan from the heat, cover and let the shrimp cook for another 5-10 minutes. Drain and set aside.


Peel all the citrus fruits and remove the segments. Slice the avocados and cut the onion into thin rings.


Arrange all the elements in a large dish and season with a dash of olive oil, chilli pepper and salt and pepper.
