1 cup butter
1/2 cup packed brown sugar
1 tsp. vanilla extract
3 cups quick cooking oats
1 cup semi-sweet chocolate chips
1/2 cup peanut butter
Butter a 9-inch square pan.
Melt butter in saucepan over medium heat;
add brown sugar and vanilla;
stir, Add oats and cook, stirring 2-3 minutes, or until evenly incorporated.
Press half of mixture into bottom of pan. Reserve other half.
Melt chocolate chips with peanut butter in a small saucepan, stirring. Pour the hot mixture into the pan, over the bottom crust and spoon evenly over the top.
Sprinkle the other half of the oatmeal mixture over the top and press down lightly so that it sticks.
Cover and refrigerate for 2-3 hours. Allow to come to room temperature before cutting into squares and serving.
