Potato Candy

60 ml (1/4 cup) smooth, cold plain mashed potatoes (no butter or milk)
7.5 ml (1 1/2 tsp.) vanilla extract
390 g (3 cups) icing sugar, approximately
75 mL (1/3 cup) crunchy peanut butter
In a bowl, combine mashed potatoes and vanilla. Gradually stir in confectioners’ sugar with a wooden spoon until a soft, but manageable dough forms.
Sprinkle a work surface with icing sugar. Knead the dough for a few minutes to give it the texture of pie dough. On a piece of parchment paper, roll out the dough to a 35 x 20 cm (14 x 8 in) rectangle.
Warm the peanut butter in the microwave for a few seconds and spread it over the dough.
roll the dough into a roll about 14 inches long.
put them baking sheet and refrigerate for 1 hour.
Remove paper.
On a work surface, cut into 1 cm (1/2 inch) slices.
Store in an airtight container.
