Ingredients for the Pasta with sautéed shrimp garlic and basil:
300 g of good quality pasta, here I used Casareccia De Cecco
500 g of fresh shrimps
5 cloves of garlic
10 sprigs of basil
A bowl of chicken broth
Sweet pepper and herbs of your choice if you want to personalize this recipe
Fry the garlic in olive oil over low heat
Peel the shrimp, it’s a bit time consuming but well worth it.
Your garlic should be golden and almost crispy, turn up the heat a bit to achieve this if needed.
prepare pot of water on the stove to cook the pasta
Take 3 minutes off the al dente time of your pasta, it will finish cooking with the shrimp.
Add the shrimp to the garlic and pan fry.
Until golden brown and crispy.
Wash the fresh basil leaves
Chop the fresh basil and add it at the end of cooking.
Mix the basil well with the shrimp
Add a ladle of chicken stock to deglaze the cooking juices and make a small sauce.
Pour the pasta into the pan and add a little more chicken broth.
Let it cooking for 2 – 3 minutes.
Season with salt and pepper.
Add a bit of sweet pepper, taste, adjust the seasoning according to your taste: cayenne pepper, ground garlic, white pepper, do as you like and follow your instinct keeping in mind that it is easier to add seasoning than to remove it.
Beef steak recipe with Kampot pepper
30g Kampot black pepper (crushed)
4 x 200g beef steak
Brush the steaks with olive oil. Rub both sides with salt and Kampot black pepper.
Let marinate for 30 minutes
Heat a pancake pan or a frying pan and cook the steaks, for 2 to 3 minutes on each side for a pink cooking or cook according to your taste.
