Strawberry Cheesecake

600g cream cheese
50g sugar
300ml (1 1/4 cups) cream
300g melted white chocolate
320g strawberry jam
300g fresh strawberries (150g chopped and 150g whole)
100g Ladyfinger biscuits


In a bowl, whisk together the cream cheese, sugar and cream for 3 minutes.
Add the melted white chocolate and mix with a spatula.
In another bowl, mix 170g strawberry jam with 150g chopped strawberries.
In a 13 x 9 inch pan lined with plastic, place some of the cream cheese mixture, cover with the strawberry jam mixture, and cover with the remaining cream cheese mixture.
Cover with the Ladyfinger biscuits.
Place in freezer for 4 hours.
Cover with remaining strawberry jam and garnish with whole strawberries.
