Strawberry Shortcake Cake Roll

Ingredients :

Biscuit :

4 eggs
60 g sugar
40 g flour
40 g cornflour
40 g butter
½ sachet baking powder

Topping :

200 g mascarpone
20 cl fresh cream
60 g sugar
300 g red fruit
10 cl Amaretto
1 can of whipped cream for decoration
Pistachios for decoration (optional)

The biscuit:

Preheat the oven to 180°C

Mix the softened butter with the sugar, 2 whole eggs and 2 yolks.

Add the flour, cornstarch and baking powder. Mix well

Beat the 2 egg whites until stiff, adding the salt

Add the whites to the mixture. Mix with a spatula

Spread the dough with the spatula on a buttered baking sheet and bake for 8 to 10 minutes at 180°C. The biscuit should be slightly golden.


Mix the mascarpone with the cream and sugar until smooth. Set aside a quarter of the mixture for decoration.

Prepare the red fruits. Keep some for decoration. Mix some of the fruit with the mascarpone mixture.

Brush the biscuit with Amaretto and spread the creamy filling.

Carefully roll up the biscuit and place it on the serving dish.

Cover with the reserved mascarpone, top with whipped cream and a few strawberries or raspberries for decoration.
