1 cup uncooked basmati rice
2 tbsp. unsalted butter
1 pound peeled shrimp
Pepper and salt
2 cloves of garlic, minced
1 onion, diced
1 red pepper, diced
1 tbsp. freshly grated ginger
2 tbsp. red curry paste
12 ounces unsweetened coconut milk
4 cups of vegetable broth
1 lime
2 tbsp. fresh coriander
Cook the rice according to the instructions.
In a pot, melt the butter. Add the shrimp, salt and pepper.
Cook for 3 to 5 minutes
Set aside
In another large pot
Place garlic, onion and pepper.
Cook for 3-4 minutes
Stir in ginger, stir
Add curry paste
Gently stir in coconut milk and vegetable stock, whisking constantly
Bring to a boil, reduce heat and simmer for about 10 minutes
Add the prawns, rice, lime juice and coriander
Serve hot.
