Ultra soft chocolate chip brioche.

Ingredients (8 people):

500G of flour
120G of sugar
2Sachets of vanilla sugar
1 pinch of salt
200Ml of milk
2 Sachets of yeast or 15g of fresh yeast
100G of butter at room temperature
2 Eggs
100G of chocolate chips

Preparation:

All ingredients must be at room temperature. Take your mixing bowl and put the flour, sugar, vanilla sugar, pinch of salt, and yeast in a little tied milk, mix well and wait a few minutes. Put the rest of the milk in the bowl, put the butter and the eggs after having let the yeast and the milk rest you can incorporate it in the bowl with the other ingredients.

Put everything in the bowl to knead. Start by going slowly so on position 1 for at least 5 minutes then position 3 for 15 minutes your dough should come off the hook if it doesn’t add a little flour take it out of the bowl and let it grow in a tempered oven for 3 hours it should triple in volume. Once the 3 hours have passed, degas the dough and add the chocolate chips.
Roll the dough into a sausage shape and cut it into equal pieces and put it in a pie dish.
Then let them grow 15 to 20 minutes like this.
Then brush with egg yolk and put in the oven for 15 minutes at 150 degrees.
